Wash and cook rice, add salt.
Heat oil in a wok, put in garlic and saute till flavour vanishes.
Add onions and stir for 2 minutes and add spring onions, carrots and spice.
Add sliced mushrooms and keep stirring till water evapourates.
Check if the rice is cooked and add to the vegetables.
Mix well, and sprinkle vinegar and soy sauce.
Adjust pepper and salt and allow to cook under low heat for 3- 5 minutes.
