How to prepare rice and beans with tomato stew

Method
- Remove all unwanted particles and wash beans.
- Soak beans in water for one hour. Then boil until the beans are soft.
- Add more water when necessary until the beans are cooked and drain them in colander.
- Heat oil under medium heat and fry onions for 3- 6 minutes.
- Add blended pepper, garlic and ginger and cook for 5 minutes.
- Add tomato puree, water and stir occasionally.
- After 10 minutes, add spices and check for salt.
- Wash and rinse the rice really well, until the water is clear and drain.
- Place in a saucepan with double the amount of water and a little salt and stir once.
- Bring to the boil, then turn the heat all the way down and cover the pan tightly with a lid.
- Cook on the lowest heat possible for 10-15 minutes.
- Use a fork to fluff up the cooked rice.
- Serve
