Descale the fish and wash thoroughly.

Using a metal spatula with a thin blade, flip fish; continue to cook 2 to 3 minutes.
Check jollof if the grains are soft and there is no water.
Serve grilled tilapia with jollof rice.
Some people prefer to add shito and coleslaw.
