Why should you season beef ?

When cooking beef, always season it first. You can keep it simple with salt and pepper, or rub garlic, herbs or spices into the flesh.

Marinades can turn any meat into something completely delicious, unless you use too much acid or marinate the meat for too long.

Leave it to marinade for some minutes but ideally you should refrigerate for 1 hour.  This allows the juices to spread throughout the meat, resulting in more succulent and tender meat.

What goes in marinade?

Three main components used in marinades are fat, acid and flavouring.

You can find the acid in citrus fruits, pineapple, papaya, and tomatoes, as well as alcohol, vinegar, and acidic dairy products like yogurt and buttermilk. Acid in marinades because it adds its own flavors and it can tenderize meat by breaking down the outer layers of connective tissue.

Everything tastes better with fat, so most great marinades contain oil to help retain moisture during cooking. They also create that caramelized brown finish during cooking.

Olive oil adds a green spicy flavor, sunflower seed, or vegetable oil.

flavorings can be fresh and dried herbs, exotic spices, vegetables (like onion and garlic), and condiments and sauces like mustard, soy sauce, sugar, molasses, honey, and ginger. Marinades that contain citrus juice should marinate from 30 to 90 minutes and no more

Method of cooking beef?

There are different method for preparing beef for your various Ghanaian dishes. You can go for slow method of cooking beef such as Pot-roasting, stewing and braising or the quick methods namely frying and  grilling.

Sometimes, beef are minced for specific dishes such as assorted fried rice or beef stir-fry recipes.
