How to prepare corned beef stew and boiled plantain

Corned beef

Onion, chopped

Garlic, chopped

Pepper, blended

Tomato puree

Curry powder

Nutmeg

Salt

Rosemary

Sauté chopped onion and garlic until tender and starting to brown in a large saucepan

Add grinded pepper, tomato puree and stir.

After 6-10 minutes, taste for salt.

Add rosemary, curry powder, nutmeg and chopped onions.

Add corned beef and allow to simmer for 3 minutes.

Peel plantain and cut into desirable sizes.

Heat water under medium heat, add salt and boil.

Drain off water when plantain is soft and transfer to plate.

Serve plantain with corned beef stew.
