Peel ripe plantain and cut into desired sizes

Add water to plantain and sprinkle salt.

Heat a pan with vegetable and add plantain.

Deep fry till golden brown, 5-7 minutes;

Transfer fried plantains to paper towel to drain excess oil.

Use asanka to grind scotch bonnet, onions, bell pepper, garlic.

Heat oil in a wok over medium heat.

Add grated onions and saute for 3 minutes.

Add all grinded vegetables, stirring occasionally for 3 - 5 minutes.

Add spices and salt to taste.

Simmer to 2 - 5 minutes.
