Serves 4 | Prep time: 10 minutes | Cook time: 24 minutes


  • 6 ounces chopped fresh spinach
  • 2 cloves garlic, peeled and minced
  • 1 12 cups crumbled feta cheese, divided
  • 2 ounces full-fat cream cheese, softened
  • 4 (4.8-ounce) boneless, skinless chicken breasts
  • 14 teaspoon black pepper
  • 2 medium Roma tomatoes, each sliced into 8 rounds


  1. Preheat oven to 450F. Line a baking sheet with parchment paper or greased foil.
  2. Steam spinach in microwave 23 minutes (or cook in a medium skillet 35 minutes over medium heat). Let cooked spinach cool, then squeeze out excess moisture.
  3. To a medium bowl, add spinach, garlic, and 34 cup feta cheese.
  4. Microwave cream cheese to soften for 1530 seconds. Add to spinach mixture, stirring thoroughly.
  5. Place chicken on baking sheet. Cut horizontal slit in each breast, creating a pocket. (Center your cut midway, between top and bottom of the breast.)
  6. Stuff each breast with one-quarter of the total spinach mixture. Sprinkle lightly with pepper.
  7. Top each breast with four tomato slices and remaining feta.
  8. Bake 1620 minutes until chicken is thoroughly cooked. Tent pan with foil if cheese starts to brown before chicken is done.

Cooking tips:

  • Choose chicken breasts similar in size so they cook evenly in the same amount of time.
  • If youre on a budget, or trying to feed more guests, this same recipe can be applied to five or six smaller-sized chicken breasts. Smaller pieces also cook faster, giving you more time to socialize.
  • An alternate method is to quickly brown the stuffed chicken in a cast iron pan, then transfer the entire dish to the oven to bake thoroughly with the remaining cook time.
  • Any other type of cheese can be substituted in the same amounts.
