Ripe plantain
Paprika
Onion

Black pepper

Method
Peel the skin of the plantain and pound in a mortar.
Add the dried paprika and black pepper.
Add the onion and ginger and continue pounding.
Scoop mixture out of the mortar into a bowl and add in flour.
Mix the flour well into it to bind all the ingredients together.
Pour enough palm oil over medium heat in a wok
Scoop a small amount of the mixture into the oil when it’s hot.
Fry until golden brown and drain it on a paper towel lined dish.
Serve with beans stew or roasted groundnuts.
Beans stew
Soak beans in water for one hour. Then boil until the beans are soft. Add more water when necessary until the beans are cooked and drain them in a colander.
In another saucepan, heat the oil and add the onions, garlic, ginger, and pepper until all the liquid evaporates.
Add the blended tomatoes. Remove all the bones from the salmon and add while stirring intermittently for 15 minutes.
Add salt and the cooked beans to the stew and stir. Lower the heat and cover saucepan.
