Cook macaroni according to package directions. Be sure to salt water before cooking.
Heat a wok over medium heat, add butter and saute garlic and onions until golden brown.
Stir in thyme, Jalapeno pepper, smoked paprika, beef salt and pepper.
Add 2 tablespoons of flour to the sauce after 5- 7 minutes.
Add in the tomatoes and continue to cook for about 2-3 minutes.
Gently add the pasta followed by milk and stir continuously.
Taste for salt and add the remaining cheese.
Transfer to a greased 2-quart baking dish or 13-in. x 9-in. baking dish. Sprinkle remaining cheese.
Bake, uncovered, at 350° F for about 20 -30 minutes or until casserole is heated through. And top is slightly brown.
Remove then let it rest for a few minutes and serve when it is still piping hot.
