METHOD
Heat oven to 220C/200C fan/gas 7.
Sieve the flour, salt and rub in margarine
Disperse the yeast in the warm milk or water, add castor sugar and add to the flour.
Mix well, knead to a smooth dough, place it in a basin covered with a damp cloth and allow it to rise
Divide the dough in half.
Brush a thin film of olive oil on a baking sheet. Working with one piece of the dough at a time, form it into a large disk with your hands and lay it on the baking sheet.
Use your hands or a rolling pin to flatten the dough until it is 1/4-inch thick or less. If the dough starts to shrink back, let it rest for 5 minutes and then continue rolling.
Top with the pasta sauce.
Scatter over the stuffing and turkey, then top with the mozzarella.
Toss the sage leaves with the oil, then scatter over the pizza, drizzling over any remaining oil.
Bake for 10-12 mins until the crust is crisp and the cheese has melted.
