And yes it is totally possible to enjoy your salad without mayonnaise.
Here’s what I call the ‘Ghana a la Salad’, a healthy, colorful and tasty way to enjoy your salads.
I head Romaine lettuce
1/2 cup cherry tomatoes
1 large tomato(core removed and diced into wedges)
2 medium-sized cucumbers (peeled and sliced horizontally)
Spring onion (finely chopped)
1 small red onion (sliced)
I cup mixed bell peppers(red, green and yellow)
1/2 tbsp black pepper -optional
Wash the lettuce leaves in salt or vinegar solution.
Pat them with a clean napkin or paper napkin to absorb excess moisture.
Tear the lettuce leaves into bite-sized pieces with your hands into a large salad bowl.
Add the cucumber, cherry tomatoes, tomato wedges, onions, and peppers.
Sprinkle with a little black pepper to taste.
Now for the dressing
1 tbsp olive oil
1 tbsp Balsamic vinegar
2 tbsp refined/clear honey
1 large garlic clove (crushed and chopped)
Whisk oil, vinegar, honey and garlic in a bowl.
Drizzle on salad!
