The main thing to remember when making an ice cream sandwich is to use a chewy cookie recipe and an awesome ice cream is a must too. You want the cookie to be soft enough that it doesn't become brittle when frozen. The good thing is you can use store-bought ice cream.

After you fill the cookies with copious amounts of ice cream, return them to the freezer you will want to give them at least 15 to 20 minutes to chill, and preferably a few hours to make sure they’re firm. For longer storage, wrap the sandwiches in wax paper.
