1 kg of gizzard
1 big onion, chopped
1 big ginger root, paste
4 cloves of garlic, paste
2 tablespoons barbeque sauce
1 teaspoon ground black pepper
1 teaspoon paprika
1/2 teaspoon cayenne pepper

Wash gizzard and season with onion, ginger, garlic, rosemary, and salt.
Cook for 7 - 15 minutes and set aside to cool.
Preheat an outdoor grill for medium-high heat and lightly oil the grate.
Remove gizzard from a bowl, pat dry with paper towels, and discard marinade. Place gizzard, on a plate and season with salt, pepper, paprika, onion powder, and cayenne pepper.
Grill for 3 to 4 minutes. Turn over, close the lid of the grill, and cook, basting with remaining barbeque sauce ever 6 minutes.
Serve with Ghana Jollof or chilled drinks.
