200g dates pitted

100g carrots, coarsely grated

50g sultanas

Zest of 1 orange

50g light brown sugar

100ml sunflower oil

2-4 tbsp milk/soya milk

200g plain flour

2 tsp baking powder

1.5 tsp cinnamon

1.5 tsp ground ginger

1.5 tsp ground coriander

Pinch of salt

Heat oven to 180C/350c/ GM 4

Line a large baking tray

Place dates. grated carrot, dried fruit and orange zest in a bowel. Add the sugar, oil and 2 tbsp of milk.

In a separate bowl mix the flour, baking powder, salt, cinnamon, ginger, and coriander.

Add the wet ingredients to the dry and lightly stir.

Add 1 to 5 tbsp of milk if the mixture feels more like dough than batter. The mixture ought to be firm enough to hold onto mounds on a baking tray, but too wet to shape by hands.

Spoon out 8 mounds of the batter and bake in the oven for 25 minutes.
