Turkey wings

2 tablespoons garlic

2 tablespoons ginger

3 teaspoons pepper, divided

3 tablespoon onions

2-1/2 teaspoons poultry seasoning

1 teaspoon salt

Method

Mix the smoked paprika, garlic powder, onion, ginger, cayenne pepper, thyme, 1 tablespoon salt and 1 1/2 teaspoons black pepper in a bowl. Sprinkle some of the spice rubs inside the cavity of the turkey.

Massage some of the rubs onto the meat under the skin. Sprinkle the remaining rub on the turkey's skin.

Place the turkey on a sheet tray and cover with plastic wrap. Refrigerate overnight or up to 24 hours so the flavors can marry.

Heat oil in a wok over high heat.   Fry chicken, several pieces at a time, for 5-6 minutes on each side or until golden brown and juices run clear. Drain on paper towels. Yield: 8 servings.
