Coconut is a versatile food in Ghana. It can be turned into oil, flour, cream, and milk.

Apart from these qualities the “super” food also has numerous health benefits. It aids weight loss, boosts brain functionality and healthy skin among others.

Coconut cake is very easy to make. Are you in the mood for some coconut cake but don't have an oven? Don’t worry, you can have your coconut cake ‘microwave’ baked!

Ingredients

4 tsp coconut flour

1 tsp baking powder

1 tsp of sugar

4 tsp melted butter

200ml coconut milk

5 eggs

Directions

Mix coconut flour and baking powder.

In a bowl add the melted butter, eggs and sugar. Whisk until well mixed.

Pour into the dry ingredients mixture and mix well.

Add the coconut milk gradually while mixing.

Grease a microwave safe bowl with butter and scoop the mixture into it.

Set the timer on medium heat for 5 minutes.

Serve and enjoy your Ghanaian coconut cake once baked with your preferred fruit juice.
