Ingredients

3 Eggs

4 medium tomatoes

Pepper

1 medium onion

Salt

1 tablespoon seasoning

Heat your non-stick frying pan with two spoons of cooking oil (vegetable or olive oil) for about one minute.

Slice tomatoes, onions and peppers and sauté for 10 minutes. Stir well, else you end up with burnt tomatoes.

Once the tomatoes and pepper are adequately fried, add salt and the stock cube to taste.

Beat the eggs in a separate plate with a pinch of salt.

Pour the beaten eggs on top of the tomato, onion and pepper that you are frying. Allow a minute, and then sauté.

Break the eggs into crumbs as you fry. When the eggs have fried adequately, put off heat.

Serve with boiled or fried yam, rice or spaghetti.
