1 slice watermelon
Few coriander or Thai basil leaves
1-2 tsp toasted coconut flakes
½ lime (juice and zest)
1 tbsp honey
Scatter over 120g pineapple pieces, a few coriander or Thai basil leaves and 1-2 tsp toasted coconut flakes.
Mix the juice ½ lime with 1 tbsp honey and drizzle over the top. Sprinkle with freshly cracked black pepper and zest ½ lime.
