Assorted Meat

A small bowl of Okra, chopped and grated.

2 cloves garlic, grated

3 medium tomatoes

1 large onion

2 scotch bonnets, ground or finely chopped

1/2 cup palm oil

1 teaspoon shrimp powder

Salt to taste

Method

Heat palm oil in a large saucepan and saute onions.

Blend scotch bonnet, garlic, ginger, tomatoes and add to the onions.

Allow to cook for 5 - 8 minutes and add your smoked salmon or tuna.

Season your assorted meat with all-purpose seasoning, thyme, salt, ginger, garlic, and onions.

Cook until meat becomes tender and add stew.

Add shrimp powder and taste for salt.

Allow to simmer under low heat for 2- 3 minutes and serve with banku or eba.
