How to prepare chicken fried rice
3 cups white rice (cold or leftover)
3 tablespoons olive oil, divided
3/4 pound chicken tenders
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon ground pepper
2 cloves garlic
1 cup frozen peas and carrots
3 tablespoons soy sauce
2 tablespoons diced green onions

Heat a large non-stick skillet over medium heat. Add 1 tablespoon olive oil.
Dice chicken into bite-sized pieces. Toss with ginger, salt, and pepper. Add to skillet and cook for about 3 minutes.
Stir in diced onion, garlic, and peas and carrots and other vegetables.
Add rice and stir to coat. Cook, stirring occasionally, 5 minutes until rice is warmed through.
Top with soy sauce and stir well, cooking for 5 more minutes.
Remove from heat and serve.
