Fresh fish

Olive oil

1 medium sized  can tomato

1/2 cup diced onion

1/4 cup diced red bell pepper

1/2 cup diced green bell pepper

1/2 teaspoon dried oregano

1 bay leaf

2 tablespoons chopped basil or parsley for topping

    Season fish with salt and pepper on both side.

    Heat 3 tablespoons of olive oil in a large saucepan.

    Sauté onions until soften and golden, 5 minutes.

    Add pepper and tomatoes and cover to cook for 3 minutes.

    Add the marinated fish and cook for 3 - 5 minutes.

    Add vegetables, add oregano, bay leaf, salt, stir and cover to cook.

    After 4 minutes, remove bay leaf, garnish with parsley and serve
